Potato salad rarely appeared when I grew up in Jordan – perhaps once or twice a year – so it always felt a special enjoyment. As a teenager (and adults), my love for potato salads is unknown. I would accumulate my plate high and quickly return to a second, third or even fourth help, and I eat each bite so enthusiastically that I often give myself the wrists. When my colleague Julia Levy From Birmingham in Alabama, Test Kitchen created the potato salad of the green goddess, I couldn't wait to go in.
This version provides a fun, Herby and enthusiastic spinning with classic creamy potatoes with crispy Haricots-scraps, perfectly cooked hard cooked eggs and a green goddess that makes this familiar page an unforgettable mass.

How to cook all vegetables perfectly for salad
The potatoes are based on all great potato salads and fall flat when not spiced properly. This means not only the use of sufficient salt, but also to ensure that it evenly penetrates the potatoes for consistent seasoning, this process begins with cooking water. The generous salting of the water promotes flavoring when penetrating the potatoes while steaming, ensuring that all biting is tasteful.
It is also important to start the potatoes in cold water and carefully bring them to the temperature. If you drop them into a hot water, you risk over cooking their exterior before the interiors are completed. Potato cells are held together by pectin, which gradually degrades when the potatoes cook- when the pectin holding the outer cells is disintegrated, the surface becomes aqueous and pulp. By starting the potatoes in cold water, they heat up more evenly and remain intact.
After cooking, it is essential to spread the potatoes in a layer on a dwarf baking sheet. This allows them to cool down evenly and quickly, preventing the remaining heat from cooking them – the flooded potato simply simply clashes with the sauce and we do not want it.
Angle of green beans is as important as potatoes. They get briefly in boiling water to secure crisp green beans. This short source, followed by an instant ice water bath to stop cooking, are fixed in their bright green and fresh moments, resulting in a lively crunch that is contrary to creamy potatoes and casting.
Easy egg key is the key
To eliminate salad and add richness, Julia contains hard-boiled eggs-greeting the lines between potatoes and egg salads. But the angle of hard -cooked eggs can be complicated, especially if you want to peel clean. To avoid this, Julia starts eggs in boiling water, technique borrowed from Kenji perfect hard -boiled egg method– Starting eggs in boiling water reduces the chances of whites sticking to the shell, so peeling is much lighter and clearer as rapid heat helps the egg whites proteins away from the membrane.
After boiling after 30 seconds, cover the eggs and cook gently with bare steaming, allowing the egg yolks to be perfectly set up without over -cooking or developing that Telltale green ring. The instant ice bath stops the cooking process and further separates the membrane from the shell, thus peeking (usually) smooth, frustrated.
A dress that gets out
Lush, bitter and layered dressing really separates this potato salad. The creamy mayonnaise and the cool, velvety sour cream begin. A spoonful of sharp dijon mustard adds the right bite, while the pressure of fresh lemon enlightens everything. The fine, Umami-packaged anchovy brings a depth, while the large amount of fresh basil and dill give freshness, which causes sunny summer excursions. Everything is processed smoothly, allowing the flavors to get into creamy, longing self -awareness.
When it's time to combine the sauce of the potatoes, use a gentle hand and fold them with a rubber spatula so that the gentle pieces remain intact. This ensures that all pieces are well involved without breaking.

Add 1 quarter of water to a large pan. Add potatoes and 1 tablespoon kosher salt. Boil the high heat. Reduce to cook and cook, occasionally mixed until the potatoes are gentle, approx. 10 minutes. Use a slotted spoon to insert the potatoes into the rim baking sheet. Divide it into a steady layer and let it cool to room temperature, approx. 30 minutes.

As the potatoes cool, fill a large bowl with ice water. Add another 2 cups of water to the tile and boil the water. Add haric whips to the boiling water and cook the beans until the gentle crisp, approx. 3 minutes. Move it into the ice bath to cool.

Fill a second large bowl with ice water. Boil 3 quarters (2.8 l) water in the same pan. Carefully lower the eggs and continue to boil for 30 seconds. Cover tightly, reduce heat to low (water must keep bare steam) and continue cooking for 11 minutes. Immediately place the egg in the second bowl in ice water and let it cool for at least 15 minutes before peeling under cool river.

Meanwhile, in a food processing bowl, mayonnaise, sour cream, basil, dill, lemon juice, mustard, anchovy fillets, pepper and the remaining 1/2 teaspoon of salt, and process it until scraped down the side of the bowl, approx. For 1 minute. Place in a small bowl and mix the chives and tarragon.

Place the Haricot Verts on a paper lined with a paper towel and dry. Cut the eggs for a quarter and move it to the small plate or bowl and cover and cool until ready to serve the salad.

In a large bowl, combine the fennel, potatoes, harics and the green goddess dressing. Mix with the rubber spatula to combine. Fold the potatoes. Season with salt to taste. Cover and relax in the refrigerator for at least 1 hour before serving for up to 3 days. To serve, add the potato salad to serve the bowl and decorate the quarter egg on top. Decorate with basil, goalkeepers and chives.
