This charred salsa verde is smoky, spicy, sweet, shiny and complex – the perfect accompaniment of Enchiladas, burritos and tacos. After destroying the Tomatillos, onions and Chiles, just throw them away – and all the juice emitted – into a blender with coriander and puree. To enhance the taste of the salsa, the puree mixture is poured into the heated oil before heating and serving.
