Inspired by Eton Mess – a classic English dessert consisting of meringue, whipped cream and strawberries – this vegan version is served with aquafaba meringue cookies, ripe strawberries, machered in a fragrant mixture of fresh lime, mint and Thai basil. While this recipe skips traditional whipped cream, feel free to add a spoonful of your favorite milk or milk-free breed.

The meringue is made from Aquafaba, from the cooking liquid of the chickpea, which is made with Tatar and sugar cream to make a stable and air foam that produces white, satin pillows, which immediately melt into the mouth. However, since the aquafaba meringue may have a rather strong “beaniy” aroma, I decided to refine the traditional mobilized strawberry dressing, giving very aromatic ingredients such as mint and Thai basil to cover it. The use of lime juice and shell in the compote also increases the flavors and promotes the necessary brightness to counteract the sweets of the dessert.

After mixing the berries with meringue cookies, be sure to serve and immediately enjoy the liquids to dissolve the cookies.

Cooking method

To the strawberry compote:

  • 1 pound (454 gram) Fresh strawberrypeel and longer in quarter

  • 12 fresh mint leavesthinly sliced

  • 12 Fresh Thai basil leavesthinly sliced

  • 1 tablespoon (15 gram) sugar

  • Man 1 lime (Do not call until you call for a recipe step)

  • 2 tablespoon (30 ml) Fresh lime juice -from 1-2 lime

To serve:

  1. To the strawberry compote: In a medium mixing bowl, combine strawberries with mint, Thai basil and sugar.

  2. Using Zester, the peeling of 1 lime directs directly above the strawberry (this ensures that volatile oils from lime peel are added to the strawberry and not lost on the cutting board).

  3. Add a lime leaf to the strawberries, mix thoroughly, then leave to stand for at least 5 and 10 minutes.

  4. To serve: When ready to serve, crumble the meringue into bite -sized pieces and divide it into 4 tray bowls. Fill each with the strawberry compote and serve it immediately.
