If the owner of catbirds, a nap in the Houston neighborhood since 1995, decided to run the bar, his companion Peter Jugge in catbirds, and did not want to see it. “It's a bar all we're all going to take off work after making trendy cocktails,” he said.

For the Heugel, the acquisition of these establishments is not just maintaining spaces and satisfy regular, but ensure that the work of the past owner continues to retire. “It happened to other businesses all the time, but I think we only use the bar turnover we don't think about the bar industry in the same way,” he said.

Blue Lagoon (has) a bar since 1968, older for Houston. We don't have a lot of bars like that. Our owner of the land at our restaurant, shrinking, the high owners, and he came out month in the moon with the woman owned. He was in his seven seven and he continued to try to find someone to hire it for something new. He continues to try to heal a fancy cocktail bar. And at once I say so, you know, things are very good for us in catbirds that have been a more popular town bars – as we think we can do the same thing with blue lagoon.
I told the big three things: keep the staff, as long as they are good people and they have been so long – maybe really love staff to do. Everything works for us (in Blue Lagoon) work for the bar before, we don't lose anyone. Being sensitive to the price – If you go with a bar like this and you know you'll bring new people, use prices lower than people for a long time. And try and focus on bar origins and make the bar as it is from that time.
The bars like this are often priced sensitive. They only. So when we got catbirds, we lowered the prices of things before, and we introduced a lot of things to spend a lot of chicks on how to make some basic cocktails and lime lemon soups and lime. We call that Robin Hooding, if we can get your money in cocktail and use it to keep cheap. We try to sell one of every 20 drinks as a cocktail. That is very, low number opposite of anvil, where cocktails are 90 percent of our marketing.
We definitely carry things we don't bring our other bars because it's something that people are very important in these establishments. We carry pickle vodka and pinnacle whipped cream vodka and other things like that, which is actually homeless in anvil, but there is a house here.
We do not make great changes in any place, but we force them. We carry a few new decorations, not a lot, but maybe a third what is the new bar in each bar. One of the rules I have is: No white light in the bar, it's all colored. In Blue Lagoon no neon led, it's all specific neon time. So all things come from time. When we cleaned the blue lagoon behind, we found old unused neons from the 80s. And I'm like, why not anyone else hang it?
Regular, more likely to doubt us at first, that I think reasonable, because of our ancestry and because many of Houston go. We talk about genalisforms many of every major city in the United States, but I think Houston is at different levels because there is no zoning. I think Houston is very useful for each developer. There are problems with gentrification, I'm not trying to hurt everything, but I think everything is for the jokes, and therefore, older places are always worried about they go.
True, indeed, people should be allowed to discuss what you do right and wrong in a way that I have never experienced before. We hung a set of lights in the blue lagoon and Peter and I walked, and when I returned two of the regulars of the ladder inspecting our work. It's kind of about it – these people who care about this place now you think you're own, but it's in many ways in their second housing, and so the comments of all they can do and are not good for their purpose. I never complained, they were very interested in their bar. And that's the first token that it might be a great bar when people who care about it.
