Should you use an electric or manual shave?
If about making a crooked ice at home, it doesn't matter if you use a manual Shaver or an electric. “I like all the restaurant manuals because it matches the ethos of what we do,” says Junya Yamasaki, the chef behind the restaurant in Yessele. Yamasaki tried two different types of kakigori for the dessert used with an industrial crank-powered industrial. “I'm still driving a manual car,” she laughs, “but (for ice shavers) I don't think there is a difference.”
In Wailua Shave Ice, with locations in Portland, Oregon, and Kauai, an electric shaver is required for people. “We started with a hand-crank,” co-founder Cory Arashiro, “but even with our electricity I could not continue.” However Arashiro acknowledged that if you make shaving ice at home – and not in a hurry to fulfill the need – any version to work. “I say, make sure your ice is very good,” he said. “To get our type of texture, you want to try this fine, not suck or grate it.”
The electric shaver finally faster to prepare your ice, but it's hard to deprive the beauty of a crank version, too.

In the Lumi Dessess Cafe, with two locations in Washington State, the ice-shaped ice is made with a proprietary frozen mixed with milk mixture. “We will pour (the liquid glass) on our machine and it is frozen in the barrel,” says Nessa Choi, the owner of the Redmond owner in Lumi. “I think you can replicate the same effect at home as long as there is a good mixture for the base.”
For Choi, it's important not only to use regular ice from a cube tray if you want your painted ice to last longer than melting. “If you use regular ice, it will melt in speed and don't make toppings so good,” Choi explained.
Instead, try frosting water or a sweet mixture of milk in the underlined indoor and giping it any kind of painted ice machine you have. You can view the mixture of milk with condensed milk or honey, or these tastes like tea, cocoa powder, crisp or frozen.
What kind of toppings do you have to use for striped ice?
“Toppings are the fun part,” says Yamasaki. “At home, you can just be crazy.” In Yess, Yamasaki serves a hard work that is traditional Japanese. There are new and macerated strawberries, chewy mochi balls, and a glaze of condensed milk. His other hardening is more experiment, with dates, a syrup of Irish coffee – perfect for someone who is interested in dessert.
In Wailua, striped ice syrups are made with fresh sugar fruit and pipes. Their signatum topping, however, is Haupia Foam – a whipped coconut milk topping. “Our real grows is snowcap, with condensed milk,” Arashiro said. “From there, just run.” Other traditional Hawaii toppings include flakes in coconut, Mochi, and Li Hing Mui, or pickled plum powder. In Wailua, you can also add sweets like oreos, a nutella drizzle, and marshmallows.
For the homemade shaved on ice, Choi regularly recommends fresh fruit – but if you don't have any access to the fruit, the jams will work too. “You can also have a caramel version with caramel sauce, crushed cookies in the Lotus, and bananas,” he said.
In fact, ice becomes a car for toppings, so anything can be done. “Don't take refuge; Cohesive,” Arashiro said. “The best part is the end, when you smoke everything and drink it.”
