Sweet, a bit spicy and ruby red, pepper jelly is a curious distribution, which is more versatile than you allow. Not only because of the player's magic and the eye -catching appearance, the Pepper Jelly took its place in the southern chamber, but also because it is delicious.
When I first met a glass jar of pepper gel, I saw it sitting on a thick wooden board, next to the ritz biscuits and a bare cream cheese.
At first, did I look at it – the Bright Jelly cream cheese? -but once I took a sample, I got it: butter biscuits, zingy jelly and a rich, velvety cream cheese that comes with perfect bite.

He thought it was from Texas in the 1970s, and the Pepper Jelly eventually became a chamber cart in the south, often sold as a canned food or at home. The taste depends on the sweet and spicy timeless balance. I especially like this version below my colleague developed Craig Ruff Birmingham, Alabama, test kitchen. It remains faithful to the classic spice and reaches a balanced ratio besides the spicy chiles.
The red pepper gives a pleasant fruit, while a small part of the green ring pepper gives a vegetable, grassy note. Fresno and Jalapeño Chiles give a slight heat to their signature – never overwhelming, but always present. Meanwhile, the apple vinegar increases the mixture with crisp acid content.
Craig relies on a food processor to process some of the Red Bell peppers and fresno chiles, release the purple juices, creating the base of the jelly and giving him the iconic red shade. The remaining red ringing peppers and the fresno chile gently cut their bite and add colorful spots that pass through the jelly (intended). Craig chooses low sugary pectin (such as Sure-yell), which does not rely on large amounts of sugar to activate, allowing better checking the sweetness of the jelly. Pectin sets the mixture, thus spreading its gel -like texture. The recipe includes simple short -term storage instructions and proper canning for longer term.
This versatile jelly deserves the place on a cheese sheet – either cream cheese, brie, or something more salty and firm, such as Manchego or Chällerhocker. Grilled meats, such as chicken, also work nicely for a sweet and spicy sandwich. Personally, I like to have a spoon over a straciatella dal, covered with a thick slice on the top of a sour. If he didn't grow up with him, the Pepper Jelly raised his eyebrows at first glance, but if he tastes it, he would win, just like me.

Curly cut 1 red peppers and 2 fresno chiles and insert the bowl in a food processor. Pulse until cut it very finely, approx. 12 pulses, scraped off the side of the bowl as needed. Place the mixture in a large set or in a Dutch oven. With a knife, gently cut off the remaining 2 red peppers and the remaining Fresno Chile; Move it to the Dutch oven using pepper. Add green peppers, jalapeño chiles and salt to the Dutch oven.

Cook, covered, medium heat until the peppers are completely softened, approx. 8 minutes.

Discover and cook, occasionally mixed until most of the liquid is steamed, approx. 5 minutes. Stir in the sugar and vinegar and boil the mixture in full boil, then boil. Stir in pectin until dissolved, return the heat to medium to high and boil the full rolling. As soon as the mixture reaches a full boiling, cook for 1 minute and remove from the heat. Let stand for 5 minutes. Used with a metal spoon, carefully scrape the foam or scum from the surface of the jelly. Move the gel to the prepared canned glasses, leaving a 1/4 inch space on top. Wet paper with towels or a kitchen towel wipe the gel from the rims.

For short -term storage: Let the jelly cool to room temperature, approx. 30 minutes. Screw the cover and cool at least 12 hours. The jelly can be stored in a refrigerator for up to 1 month. When you are ready to serve, mix the jelly to distribute the peppers evenly.

For long -term storage: Until the gel is still hot, screw the top until the fingertips are tight). Place a scaffolding in the bottom of a large set. Fill with water and boil the high heat. Carefully lower the pots into the pot. Returning to boil the water to the high; Cover and boil for 10 minutes. Heat, let the bottles sit in the water for 5 minutes. Carefully remove the bottles from the water with canned grips. The jelly can be stored at room temperature for up to 1 year; Refrigerator after opening and use within 3 weeks. Note
This recipe was developed with low sugary pectin; Do not replace pectin types unless you know how to properly adjust the recipe. It is recommended that you use low sugars pectin from the Ball or brand or Sure-yell, not other brands (the Pomona brand, especially not like the Ball or Burejell in our tests).
The jelly will have a colder texture. Leave it to room temperature if you want a looser texture.
Make-Head and Storage
The unprocessed gel can be cooled for 1 month.
Processed (heat -treated) jelly can be stored in a cool, dark place for up to one year. After opening, cool and use within 3 weeks.
When you are ready to serve, mix the jelly to distribute the peppers evenly.
