The more conductive the panThe more quickly and thoroughly your focaksia will brown on the outside and bake inside. Aluminum or an aluminum-steel combination are highly conductive; Stainless steel on his own is not. Cast iron is also nicely canductive, but takes much more than aluminum to heat through. Stanware and ceramic are less conductive and so slower to heat (and also less able to keep the heat).

Why is conductivity so important? Can't you simply bake your focaxia more in your favorite glass pan?
Yes, you can, but this is the scrub: the more the Focaxia is in the oven, the more the interior dries outside. Second place: Steel / aluminum pan. With his moderately brained crust and interior texture to that of the black aluminum pan, this is a good choice for those who can live without the extra-crispy bottom.
Third place: Clear Glass Pan. Focaxia baked in a clear tempered glass pan has a light gold crust, with no of the desired committing it is moisten as the crusts baked in metal pans, but not unpleasantly so. If you prefer a soft, almost cake-like focaksia, glass would be a good choice for you.
Last Location: Disposable Shiny Aluminum Pan. Despite the Town of the Pan, which could speak to good conductivity, the shiny surface seemed to deflect heat rather than absorb it. The result: a very underbacked phocaxia, one barely browned on the bottom with a “flabby,” almost gummy interior.
