Eat more protein? Make the flatbreads.


“Most on-run recipe we've ever published.” That's how my colleague described the Chili crisp cottage cheese flatbreads. He did not talk about the chili crisp; He spoke about the protein.

After fire in the early 2000's thanks to the Atkins diet, Protein is back – Everybody, it seems, is talking about it, diversifying the ways they get it, and usually trying to figure out about to eat More From it. You probably have someone in your life who is thinking about protein This very minute. (For me, it's my husband.)

And the queen of high-protein ingredients? It's cottage cheese. So I agree with my college; When the test kitchen published the recipe for a few weeks ago, it felt as perfect timing.

And after protein is not necessarily tip of mind when Sarah Jampel, King Arthur's prescription development and test kitchen manager, started working on these. Instead, she reached for cottage cheese for texture reasons. “As other acidic ingredients like yogurt or buttermilk, cottage cheese tenders the dough and makes it easier to roll out,” she told me. This trucks: The flatbreads are exceptionally soft (especially if you cook them in a skillet on the stove) and terypistically soft. (And thanks to Bread MelThey also have slightly chewing.)

This recipe requires a brief list of ingredients, most notable cottage cheese and Bread Mel.

Of course, cottage cheese brings other things to the table, namely all that protein. There is 14 grams of protein in each of the flatbreads, which is two more than my favorite protein bar.

But that's not all. The cottage cheese also adds fat, moisture and its signature tang. (And salt. “Cottage cheese is Thus Salty, “Sarah says.) To complement the taste of the cheese, Sarah stings a wood's first choice of the former choice of Hoyb's first choice of Hubi.

To resist the heat further, Sarah recommends pairing those with a dip such as Tzatziki. You may also walk the other way and farmer them with some Calabrian chili paste. But let us be real, you know what you and me and everyone else will do with the flatbreads. We want to double down on the protein and eat them with eggs.
