Tofu is now the top five elements on the grocery list and is a favorite source of high quality protein, which easily exceeds eggs (not surprising nowadays) to afford and versatility. I always like to keep at least two types in the refrigerator for elastic cooking options, so I can make Mapo Tofu with soft silky curd, crispy, mixing fried tofu vegetables or a simple plate dinner. No matter the style or texture – whether coupled with another protein, such as meat or eggs, or on its own – tofu can be wonderfully adapted and an ideal vehicle for a wide range of flavors.
