I love them in the colder months roast until carmonized and sweet or not cooked on the stove and buttered– But after spring punches, I like to hug the crackling and eat them raw with recipes like this fresh carrot and raisin salad developed by Birmingham -based body kitchen colleague Elizabeth Mervosh– In this salad, grated carrots and fat raisins are thrown with creamy mayonnaise-based cast, which receives a refreshing acidity from vinegar, orange juice and lemon juice. The salad on the top of crispy pistachios just before serving. Every bite is full of fruity, cake, sweet and delicious flavors.
This slightly sweet vegetable garnish serves as great on casual cookouts as an official Easter fork. It takes a few minutes to prepare and you don't have to turn on the oven yet. Here are some tips to perfect it.

3 simple techniques for perfect carrots and raisins for salad
1. Make the carrot for the best salad. Elizabeth recommends that the carrot be destroyed for a salad with a sufficient amount of crunch. During the testing, he found that the carrots cut it down in another way, but it did not work: the grated carrot was too cheap and lost in the bandage, the carrot strips were too slippery, and the sliced raw carrot was too difficult to pass. The destruction of carrots is best suited for a pleasantly crispy salad. While you can do so on the holes of a box of files to prevent sore muscles and scratched wrists, we recommend that the carrot be chopped by fixing the food processing disc.
2nd, take a few minutes to cut raisins. The salad raisins add a welcome sweet pop. But to make their microwave, they found that their microwaves dampen the raisins with a simple orange juice, vinegar and honey dressing to create a weaker texture and to allow the raisins to briefly marinate the heated fruit juice in a mixture of bright citrus. Once the raisins descended, we do not allow this delicious juice mixture to waste – lemon juice, more honey and mayonnaise frothy with the sauce.
3. Serve the salad immediately. Once the carrots, raisins and pistachio are thrown with the cast, we recommend serving the salad immediately. The salt in the bandage begins to moisture from the carrot over time and makes a soup salad with a damp puddle at the bottom. If a puddle is formed before serving, just lower some of the excess moisture or re -throw the salad to distribute the liquid just before serving.

The carrots are chopped on the large holes of the box. Alternatively, carrots can be ruined by recording the food processor. You should have about 3 1/2 cups of chopped carrots.

In a small microwave safe, mix orange juice, vinegar and 1 teaspoon honey until the honey is dissolved; Add raisins and toss the coating. The microwave oven is high until the orange juice mixture is hot and bubble, approx. 45 seconds. Allow to sit, mixed every 5 minutes until the raisins are fat and softened, approx. 15 minutes.

In a fine mesh filter set over a medium bowl, lower the raisins, maintaining the orange juice mixture in the medium bowl; Place the raisins aside. Stir the mayonnaise, lemon juice, salt and the remaining 2 teaspoons of honey in the reserved orange juice mixture.

You can shake the carrots in airtight container up to 2 days before making the salad.
We strongly recommend discarding the salad just before serving, but the remainder can be cooled in an airtight container for up to 2 days. Note that the salad becomes more wet and you may have to leak the excess liquid before serving.
